Ingredients:
- 1 medium summer squash, thinly sliced
- 2 tablespoons olive oil
- Salt and pepper to taste
- 4 slices whole grain bread
- 1/2 cup ricotta cheese
- 1 tablespoon chopped fresh herbs such as basil, thyme, or parsley
- 2 tablespoons chopped sun-dried tomatoes
- 1 teaspoon red pepper flakes
- Handful of arugula leaves
Instructions:
Preheat a grill or grill pan over medium heat
In a bowl, toss the sliced summer squash with olive oil, salt, and pepper
Grill the summer squash slices for 2-3 minutes on each side until tender and slightly charred
Toast the slices of bread until golden brown
In another bowl, mix the ricotta cheese with chopped fresh herbs, sun-dried tomatoes, and red pepper flakes
Spread the herbed ricotta mixture evenly onto one side of each slice of toasted bread
Layer grilled summer squash slices on top of the herbed ricotta on two slices of bread
Top with a handful of arugula leaves and cover with the remaining slices of bread
Cut the sandwiches in half and serve immediately
