Ingredients:
- 4 chicken cutlets
- 8 oz mushrooms, sliced
- 1/2 cup dry white wine
- 1/2 cup chicken broth
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- Salt and pepper to taste
- 2 tablespoons fresh parsley, chopped
Instructions:
Season the chicken cutlets with salt and pepper
Heat olive oil in a skillet over medium-high heat
Add the chicken cutlets and cook for 4-5 minutes per side, or until cooked through
Remove from the skillet and set aside
In the same skillet, add minced garlic and sliced mushrooms
Saut for 3-4 minutes until the mushrooms are tender
Pour in the white wine and chicken broth
Bring to a simmer and cook for 5-7 minutes, allowing the sauce to reduce and thicken
Return the chicken cutlets to the skillet and simmer for an additional 2-3 minutes, until the chicken is heated through
Garnish with fresh parsley before serving
Serve the chicken cutlets with mushroom wine sauce over rice or pasta
